perches and play gyms

i want to make some new playgyms for my boys (they have three but they are somewhat small) with real branches - I saw a thread on this with some great ideas but i can't find it now!
are there types of plants/trees that should NOT be used? i have to admit im a little worried about putting branches for them to chew on i dont want them to get sick.... are dead or live branches better?
any direction on this would be great!
