Colour mutations by Dr Terry Martin is a good all round book that is useful for beginners and experienced breeders alike.
Asiatic Parrots and their mutations by T. Bastiaan and G.J.J Bastiaan is a good beginners guide to breeding Ringnecks and other asiatic parrots.

This is a good book too, and I prefer it over the Bastiaan book because it covers more recent findings in mutations.
